Lebanon used to import most of its food, until the economy stalled in 2019 due to political instability and inflation. The situation has prompted Lebanese citizens to investigate traditional produce and foods which are available locally; such as orange and rose blossom preserves, olive oil and Zaatar – a popular spice mix.
One such entrepreneuse is already starting to export.

Her experiments reflect a gastronomic shift away from the cities and food imports towards local businesses focused on limiting waste and greenhouse gas emissions.
